
Blueberry Pie!
There are recipes that may seem intimidating and complicated due to their name and appearance, but the reality is that they are not that difficult. This blueberry pie took us 10 minutes to make.
It is true that we have not made the dough ourselves and we have gone straight to buy it ready-made to cut down on time, but the thing is that when we made it we did not want to be in the kitchen for a long time and using refrigerated dough avoids many steps.
It basically consists of placing a sheet of cake in the mould, pouring the fruit that we have mixed with a couple of other things on top and covering it in whatever way we like, then the oven does its magic.
Cooked blueberries are wonderful, raw they may not mean much to you, but when cooked, they become this wonderful syrup/jam that doesn’t need anything else.
This typical American cake will seem delicious to you and will remind you of TV series and cartoons :), it is very typical of the 4th of July and other special holidays and occasions.
Blueberry pie recipe
Ingredients:
-3/4 cup* of sugar
-3 tablespoons of cornstarch
-1/4 teaspoon of salt
-1/2 teaspoon of ground cinnamon
-4 cups of blueberries
-2 sheets of shortcrust pastry from the supermarket
Preparation:
-Preheat the oven to 190ºC.
-In a bowl, mix the sugar, cornflour, salt and cinnamon powder, add the blueberries and mix well. Our blueberries were a mix of fresh and frozen. If you only use frozen ones, add 1/2 tablespoon more cornflour.
-Line a round, scalloped mould with a sheet of shortcrust pastry (check the diameter of the pastry you bought and use a mould that is suitable for the size of the pastry).
-Add the blueberries and spread them out in the mould.
-Cover the cake with the other sheet of shortcrust pastry, sealing the edges as best as you can.
-Make several cuts in the centre of the cake, so that the steam can escape when it is cooked.
-Bake at 190ºC for 50 minutes. Remove from the oven and leave to cool on a rack.
-At home we like it warm with a little ice cream, this means that when we cut it, the fruit juices and sugar will not yet be curdled, but if you want a perfect cut without liquid coming out, put it in the fridge and let it rest for several hours or overnight. In the photos you can see both the warm and rested moments from a night in the fridge.
